Loaded Mashed Potatoes (Made in the Power Pressure Cooker XL)

We decided to try something new with our mashed potatoes and oh, am I glad we did. We will have these a lot in the future. These are so yummy!

Loaded  Mashed Potatoes

Ingredients
8 Medium potatoes, peeled and diced
2 Cups Chicken Broth
4 Green Onions, Diced
Bacon, diced and cooked
1-1/2 Cups Shredded Cheddar Cheese (or more)
1 Cup Sour Cream
3 TBS Butter

Directions:

Place basket in pressure cooker. Add chicken broth. Place potatoes in the basket. Put lid on pressure cooker and set on soup setting for 30 minutes.
When done, release steam and carefully remove lid.
Place the potatoes in a large bowl. Add sour cream and butter. Using a hand mixer blend up potatoes until well mashed and little or no lumps are left (if you need more sour cream or butter you can add as much as needed)
Add green onions and bacon and stir until well blended.

You can garnish with extra bacon, cheese and green onions if desired.

I did not take just a picture of the potatoes without the rest of the dinner. But at least you can see what the potatoes look like served. lol!
