We love pancakes and we love them homemade. This is our go to recipe. We've always added cream to ours. Most people don't but try it. You'll love them so much. I promise!
Homemade Pancakes with Cream
Ingredients:
1/2 Cup Flour
3-1/2 Tsp Baking Powder
1 Tsp Salt
1 TBS White Sugar
1 Cup Heavy Cream
1/2 Cup to 1 Cup 1% Milk (start with 1/2 Cup and add more if batter is too thick. We usually end up using 1 cup but it's up to how thick you like your batter to be)
1 Egg
3 TBS Butter, melted (do not use margarine, use unsalted butter)
Confectioners Sugar (to top)
Berries/Fruits or Maple Syrup
Directions:
In large bowl sift flour, baking power and salt and pepper (we never skip sifting)
Stir to combine
Make a well in the center and add your egg. Pour in your milk and heavy cream and melted butter.
Stir until smooth, adding more milk if it's too thick. You don't want it to be too thick nor too thin. You also want your batter to be smooth so your pancakes will not be lumpy.
Set your griddle (or frying pan) to a high or med-high and spray with a cooking spray (or use butter if you would rather. We use spray, but everyone likes something different.)
Pour some batter using a measuring or teacup to the size you like your pancakes. Pouring slowly so you will get a more round pancake.
Cook until you start to see bubbles. Using a spatula carefully lift up a side to see if it's a nice golden brown. Once it is, flip pancake over and cook until the bottom is a nice golden brown.
Sift some confectioners sugar over the top and garnish with berries or fruit. Or you can add butter and maple syrup or whatever you like on your pancakes. Everyone here is a little different with what they like. Some like berries and fruits and others are loads of butter with maple syrup.
