Spaghetti with Garlic Avocado Sauce

We decided to try something new today. We love spaghetti and love avocados so when someone told me she made a version of this, we decided to try making our own version. It was really delicious and was requested to make again. We're doing it again tonight!

Spaghetti with Garlic Avocado Sauce

Ingredients:
12 Oz Spaghetti, cooked and drained
2 Ripe avocados seeded and diced
1/2 Cup Fresh Basil Leaves, diced
2 Cloves Garlic, diced
2 Tbs Freshly Squeezed Juice from a lemon
Salt & Freshly Ground Black Pepper (to taste)
1 Cup Cherry or Grape Tomatoes, cut in half
Parmesan Cheese (to taste)

Directions:
Place avocado, basil, lemon juice, garlic and olive oil  into a blender or food processor and puree.

Place a sieve over a bowl and pure the sauce a little at a time and push through the sieve. You will need to use a spoon or spatula to do this. When doing this you will need to take a spatula and scrap off the sauce from the bottom of the sieve. When you are done, discard what is left in the sieve and season with salt and pepper.

Add the cooked spaghetti to the sauce and toss carefully to cover all the spaghetti. Add the tomatoes and stir until well blended.

Transfer serving to plate and sprinkle parmesan cheese over the top.
